Aspartame is a non-calorie artificial sweetener comprised of methanol, phenylalanine and aspartic acid. It is used in diet sodas and thousands of other products worldwide. Since it appeared on the US market in the 1980s, aspartame and the possible health risks from the substance have been a topic of much debate. Research has linked the sweetener to diabetes, fibromyalgia and certain forms of cancer. Here are some of the dangers of excessive aspartame consumption. Cancer Studies have found a dangerous connection between aspartame consumption and the development of brain tumors. When aspartame breaks down it produces a substance called DKP. As your stomach digests DKP, it produces a chemical that induces the growth of brain tumors. Diabetes Aspartame consumption is extremely harmful to people with diabetes. It makes it more difficult to control sugar levels and aggravate diabetes-related conditions such as retinopathy, cataracts, neuropathy and gastroparesis. The sweetener also has been known to cause convulsions often mistaken for insulin reactions. Psychological Disorders Emotional and mood disorders have been linked to aspartame. Studies suggest that people with certain emotional problems are more sensitive to aspartame. High levels of aspartame cause changes in the serotonin levels which can lead to behavioral problems, depression and other emotional disorders. In some cases, the side effects were so dangerous that doctors were forced to put an end to the studies. Hinders Weight Loss Aspartame can be found in diet sodas and most other diet products. However, research indicates that the sweetener increases your hunger and can actually impede your weight loss. Phenylalanine and aspartic acid can cause spikes in insulin levels and force your body to remove the glucose from your blood stream and store it as fat. Aspartame also inhibits the production of serotonin and prevents your brain from signalling to your body that you are full. This can lead to food cravings and make it more difficult for you to lose weight. Birth Defects Aspartame is an excitotoxin or a substance that has the potential to damage or kill cells in the nervous system. The blood-brain barrier is a structure that stops harmful substances from penetrating the brain. The barrier doesn't completely form until a child is one year old, therefore, before a child is born, its nervous system is vulnerable to any dangerous excitotoxins that the mother may consume. Too much exposure to phenylalanine or aspartic acid may cause irreversible brain damage and other serious birth defects. Vision Problems Methanol, one of Aspartame's components, can damage the retinas and the optic nerves. Aspartame consumption has been connected to eye pain, blurred vision and, in some cases, blindness. Brain Damage and Seizures Aspartame can change the chemistry of the brain. Formaldehyde, a product of methanol, gathers in certain areas of the brain causing degenerative diseases such as Parkinson's, Alzheimer's and ALS. Aspartame consumption can also trigger seizures in both epileptics and other individuals without a history of epilepsy. Aspartame may contain fewer calories than sugar, however, the toxic sweetener has the potential to cause serious damage to the nervous system and in the worst case scenarios can be fatal.

Aluminum is the most abundant metal on the planet and it is never destroyed, only transformed. It binds to other particles and can dissolve in water, be taken up by plants and stay suspended in the air. There’s a big battle line drawn between scientists that say the aluminum we’re exposed to every day doesn’t propose any risk and science that has shown just how dangerous aluminum might be. The Agency for Toxic Substances & Disease Registry (ATSDR) lists aluminum in its toxic substances list but say that of the amounts of aluminum we’re exposed to every day, only a small bit is actually absorbed into the bloodstream. The real issue lies in the fact that there are many, many forces behind the experts that say it doesn’t pose a risk. Aluminum is used in everything from cookware and siding to antiperspirants, food additives, vaccines and even BPA-free water bottles. Multiple industries have a stake in suppressing research or claiming that data is unreliable. Even the government has to worry about its long support of fluoridation of drinking water because aluminum has been found to react dangerously with fluoride. What It’s In Besides through antiperspirants and vaccines, we’re exposed to added aluminum from cookware, foil, and baking powder. Over-the-counter antacids, anti-diarrheal drugs and non-prescription pain and inflammation relievers also contain aluminum.Dr. Mercola warns that feminine douches are another source of aluminum along with baked goods, table salt, processed cheeses, refined flours and other refined foods. Dr. Mercola also warns that the crystal deodorant stones sold in health food stores contain a type of aluminum. These stones are made from alum, which is also known as potassium aluminum sulfate, so technically-speaking, these stones are not aluminum-free. The environmentally-safe water treatment company Lenntech says that aluminum is not an “innocent compound.” Their researchers report that aluminum accumulates in plants and affects the animals that consume them. Aluminum is contributing to declining populations of amphibians, birds and fish and aluminum in groundwater damages tree roots. Aluminum sources that are of the biggest concern include antiperspirants, vaccines and water. Aluminum in Antiperspirants & Deodorants In 2001, a study was done to determine the rate at which we absorb aluminum through the skin by using antiperspirants. The researchers found that in one swipe, .012% of the aluminum was absorbed through the skin. In 2004, researcher Gloria Yiu investigated the effects of common health and beauty aids with aluminum as their active ingredient on DNA in canine cells. She tested Crystal Natural, Old Spice and Secret Platinum and found that they damaged the DNA of the cells. The natural alternative, Crystal Natural, delivered the most extensive damage. In 2005, a study by Darbre et al published in the Journal of Inorganic Chemistry found that aluminum in antiperspirants can interfere with normal cell function and that aluminum increases gene expression like estrogen-mimickers do. Aluminum in Vaccines Aluminum is used as an adjuvant in many vaccines in place of thimerosal, says Dr. Lawrence Palevsky. Adjuvants work by amping up your immune response to the antigen, the infecting agent. Scientists are still unclear about how adjuvants work but they use them so that they can use fewer antigens and cut costs. Aluminum is found in DTaP, Haemophilus influenza B (HIB), Hepatitis A and B, Human Papilloma Virus (HPV), Pediarix, Pentacel, Pneumococcal, diphteria, tetanus, pertussis, and pneumonia vaccines. In 2001 University of Kentucky professor Boyd Haley found that nerve cells were damaged by aluminum, especially when combined with common vaccine components such as formaldehyde, mercury and the antibiotic neomycin. According to Environmental Defense, says Dr. Palevsky, all vaccine ingredients are carcinogenic, poisonous or potentially harmful to the gastrointestinal, immune, neurological and pulmonary systems. Dr. Russell Blaylock published a 5-part series on Dr. Mercola’s website titled: “The Truth Behind the Vaccine Coverup” which includes a section on aluminum. Blaylock reveals the contents of a 2000 report detailing the meeting between 51 scientists and doctors representing 5 vaccine manufacturers titled “Scientific Review of Vaccine Safety Datalink Information.” The meeting was held to determine how to handle a Centers for Diseases Control and Prevention (CDC) study by Dr. Thomas Verstraesten that found a connection between vaccine ingredients and neurodevelopmental disorders. Four years later, Dr. Verstraesten published a report reversing his earlier conclusions based on the “expert” findings from this meeting. Blaylock was outraged by the blatant deceptions contained in the report. Dr. Johnson, for example, says that aluminum salts “have a wide margin of safety” and that there is “absolutely no data” about the synergistic effects of “binary metal mixtures [mercury and aluminum].” In fact, says Blaylock, aluminum salts are known neurotoxins that: Are toxic to neuronal neurotubules Interfere with antioxidant enzymes Poison enzymes that repair DNA Interfere with cell energy production Block glutamate re-uptake Bind to DNA Interfere with neuronal membrane function Blaylock adds that “toxins that share toxic mechanisms are almost always additive and frequently synergistic” and that both aluminum and mercury accumulate in the brain and spinal cord. When a number of doctors remark that no health concerns involving aluminum salts had been raised from the material they were looking at; one doctor spoke up. Dr. William Weil said “There are just a host of neurodevelopmental data that would suggest that we’ve got a serious problem…to think there isn’t some possible problem here is unreal.” Dr. Paul Stehr-Green also voted to give the matter further study: “The implications are so profound these should be examined further.” Blaylock says that the use of aluminum hydroxide and aluminum phosphate in vaccines has been linked to loss of autonomic nervous system function in children.He says that French physician Dr. Gherardi has gathered more than 200 proven cases of chronic immune stimulation by injected aluminum and that this activation is a major cause of damage in multiple degenerative brain disorders. Blaylock believes that evidence exists for this chronic immune activation being a major cause behind autism, ADD and Gulf War Syndrome. A study published in the 2007 issue of Neuromolecular Medicine has given further evidence for this Blaylock’s theory. The scientists took a look at the aluminum adjuvant used in vaccines given to Gulf War soldiers. They injected mice with the adjuvant in quantities similar to those used in the vaccines and found that they created a 35% motor neuron loss, and a 41% increase in cognitive deficits. Aluminum & Fluoride in Water French researchers in Bordeaux have published the results of a study in the American Journal of Epidemiology in February of 2009 concerning Alzheimer’s and aluminum. Dr. Virginie Rondeau and her colleagues followed aging adults for 15 years and measured how aluminum and silica in their drinking water affected their brain health: cognitive decline, dementia and Alzheimer’s disease. A daily intake of just 0.1 milligram of aluminum was linked to greater rates of cognitive decline in the subjects. A high intake of aluminum more than doubled the risk of developing dementia. Silica, the researchers noted, had the opposite effect. 10 milligrams of silica daily reduced dementia risk by 11%. Silica may reduce the absorption aluminum or increase its excretion from the body. One of the biggest concerns about aluminum is that, as the ATSDR reports, aluminum is in our drinking water and with the increase in exposure through so many sources, who knows how much we take in? It’s been known since the late 1990’s that aluminum and fluoride combine in dangerous ways. A study led by JA Varner published in the 1998 issue of Brain Research had to be stopped because 80% of the rats they fed low doses of fluoridated water to died. The researchers found that fluoride allows aluminum to cross the blood-brain barrier, resulting in twice the accumulation of aluminum in the rats’ brains than those of rats given non-fluoridated water and this accumulation of aluminum resulted in dramatic brain cell degeneration. Jake Richardson Ever felt like you couldn’t give up cheese? Ever think it might actually be a drug? The surprising news is that as far back as the 1980′s researchers have known that cheese contains trace amounts of morphine. Seriously. In 1981, Eli Hazum and his colleagues at Wellcome Research Laboratories reported traces of the chemical morphine, a highly addictive opiate. It turns out that morphine is found in cow milk and human, purportedly to ensure offspring will bond very strongly with their mothers and get all the nutrients they need to grow. Researchers also discovered the protein casein, which breaks into casomorphins when it is digested and also produces opiate effects. In cheese, casein is concentrated, and so is the level of casomorphins, so the pleasurable effect is greater. Neal Barnard, MD said, “Since cheese is processed to express out all the liquid, it’s an incredibly concentrated source of casomorphins—you might call it dairy crack.” (Source: VegetarianTimes.com) One research paper states, “Casomorphins are peptides produced from the breakdown of CN and possess opioid activity. The term opioid refers to morphine-like effects which include signs of sedation, tolerance, sleep induction, and depression.” (Source: University of Illinois Extension) And another research study conducted in Russia found that a type of casomorphin found in cow milk might impact human infant development negatively, specifically in a manner resembling autism. To make matters worse, cheese also contains saturated fat and cholesterol, which contribute to heart disease. One ounce of cheese can contain a large amount of saturated fat (check out this Fat Content of Cheese Chart). A recent New York Times article states Americans now consume about 33 pounds of cheese each year. Reducing cheese and saturated fat consumption is something anyone can do to prevent heart disease, since “Unhealthy diets and lack of exercise may kill about 300,000 to 500,000 Americans each year.” (Source: Cspinet.org) But as many know, cutting back on cheese can be challenging because of the good feelings – the opiate effects of casomorphins – it produces. Chef Isa Chandra Moskowitz, a former self-described cheese addict said, “You need to give yourself a couple of months without cheese, some time to let your taste buds catch up with your ethics. It might sound like deprivation at first, but your body will adjust.” “I started loving Brussels sprouts and butternut squash,” Moskowitz said. “I could taste the subtle difference between a raw and a toasted pumpkin seed. You raise an interesting question. Recently, a Harvard researcher gave a provocative talk on the association between cancer and cow's milk and other milk products. The scientist, Ganmaa Davaasambuu, M.D., Ph.D., a native Mongolian, noted that ingestion of natural estrogens from cows (particularly from pregnant cows) in milk may be linked to breast, prostate, and testicular cancers in humans. All are "hormone-dependent" tumors, meaning that they need sex hormones to grow. Dr. Davaasambuu cited a study comparing diet and cancer rates in 42 countries that showed a strong correlation between milk and cheese consumption and the incidence of testicular cancer among men age 20 to 39 – rates were highest in high consuming countries such as Switzerland and Denmark and low in Algeria and other parts of the world where people eat less dairy. She also linked rising rates of dairy consumption to the increased death rates from prostate cancer (from near zero per 100,000 men five decades ago to seven per 100,000 men today) and noted that breast cancer also appears to be linked to milk and cheese consumption. Dr. Davaasambuu emphasized that natural estrogens are 100,000 times more potent than environmental estrogens and that today's cow's milk is particularly rich in them. The principal reason is that dairy farmers now milk their cows about 300 days per year. For much of that time the cows are pregnant, and as pregnancy progresses, the estrogen content of their milk increases. According to Dr. Davaasambuu milk from cows in the late stage of pregnancy can contain up to 33 times as much of the hormone estrone as milk from non-pregnant cows. In the United States, skim milk (as opposed to whole or two percent milk) has the lowest levels of hormones. That's not surprising because hormones are fat soluble. In this respect, skim milk is much like milk in Mongolia where cows are milked for only five months a year and not in the late stages of their pregnancy. Another of Dr. Davaasambuu's studies showed increased hormone levels among Mongolian third-graders after a month of drinking commercial milk from the United States. Among women, milk consumption has been associated with an increased risk of ovarian cancer in both the Nurses' Health Study and in a 2005 study from Sweden's Karolinska Institute. (On the other hand, 2002 data from the Nurses' Health Study showed that the more low-fat dairy products premenopausal women consumed, the lower their breast cancer risk. This didn't hold true for post-menopausal women, and the lower risk among pre-menopausal women didn't continue after they reached menopause.) Organic milk is better in many respects than conventional milk but still may be full of natural hormones. My advice: cut down on dairy products. Substitute soy milk for cow's milk when possible. Agave makes a good substitute for sugar for a variety of reasons. Agave nectar is a real sugar, as opposed to an artificial or non-nutritive sweetener. It has properties similar to many sugars with one important exception: its glycemic index is significantly lower. This makes it a healthier alternative to many processed AND natural sweeteners, including: white granulated sugar brown sugar demerara or turbinado sugar maple sugar crystals dehydrated cane juice date sugar Weight Management Friendly Agave nectar's low glycemic index makes it suitable for some individuals on low-carb or slow-carb diets (the Atkins Diet, the South Beach Diet) and for a variety of weight loss/management programs. Granulated sugar has an average glycemic index in the high 60's, while agave generally scores under 30. Foods with a glycemic index lower than 55 are considered low glycemic foods. Foods lower on the scale are less likely to trigger the body's mechanisms for fat storage. While it's not a "free" food for indiscriminate consumption, many individuals on a diet or weight maintenance plan find that agave is a healthier substitute for sugar, and that moderate use of agave nectar can help them enjoy foods that otherwise might be off limits. Diabetic Friendly Diabetics are usually advised to monitor sugar intake in their diet and, like those trying to lose weight, watch the glycemic index of the foods they eat. Agave nectar DOES have calories and carbohydrates that must be taken into consideration, and responses to sweeteners vary from one individual to the next. However, because agave has a lower glycemic index than refined sugars, its carbohydrates are less likely to raise the blood sugar quickly. Again - agave is not a "free" food but, under proper medical monitoring, using it as a substitute for sugar may broaden dietary options for many diabetics. No Bone Char!? Some granulated and brown sugar - especially brands made from sugar cane - are filtered using bone char (animal-bone-based charcoal). Agave nectar is completely vegan, meaning that it's appropriate for those whose diet and lifestyle choices exclude all animal products. Using Agave as a Substitute for Sugar Though agave nectar is more calorie-dense than brown or white sugar, it is about 40% sweeter, so the amount of agave can be reduced. It may take some adjustment of recipes to substitute agave nectar for granulated sugars, but it's much easier than using an artificial sweetener to substitute for sugar. Artificial sweeteners provide sweetness, but few of the functional properties of real sugars. In addition, science has shown that foods that feature large amounts of milk and sugar — such as puddings and ice cream — tend to raise serum cholesterol and can contain oxidized cholesterol, a culprit in atherosclerosis. Wow- very interesting....Everyone should read :) ONIONS! I had never heard this!!! PLEASE READ TO THE END: IMPORTANT In 1919 when the flu killed 40 million people there was this Doctor that visited the many farmers to see if he could help them combat the flu... Many of the farmers and their families had contracted it and many died. The doctor came upon this one farmer and to his surprise, everyone was very healthy. When the doctor asked what the farmer was doing that was different the wife replied that she had placed an unpeeled onion in a dish in the rooms of the home, (probably only two rooms back then). The doctor couldn't believe it and asked if he could have one of the onions and place it under the microscope. She gave him one and when he did this, he did find the flu virus in the onion. It obviously absorbed the bacteria, therefore, keeping the family healthy. Now, I heard this story from my hairdresser. She said that several years ago, many of her employees were coming down with the flu, and so were many of her customers. The next year she placed several bowls with onions around in her shop. To her surprise, none of her staff got sick. It must work. Try it and see what happens. We did it last year and we never got the flu. Now there is a P. S. to this for I sent it to a friend in Oregon who regularly contributes material to me on health issues. She replied with this most interesting experience about onions: Thanks for the reminder. I don't know about the farmer's story...but, I do know that I contacted pneumonia, and, needless to say, I was very ill... I came across an article that said to cut both ends off an onion put it into an empty jar, and place the jar next to the sick patient at night. It said the onion would be black in the morning from the germs...sure enough it happened just like that...the onion was a mess and I began to feel better. Another thing I read in the article was that onions and garlic placed around the room saved many from the black plague years ago. They have powerful antibacterial, antiseptic properties. This is the other note. Lots of times when we have stomach problems we don't know what to blame. Maybe it's the onions that are to blame. Onions absorb bacteria is the reason they are so good at preventing us from getting colds and flu and is the very reason we shouldn't eat an onion that has been sitting for a time after it has been cut open. LEFT OVER ONIONS ARE POISONOUS I had the wonderful privilege of touring Mullins Food Products, Makers of mayonnaise. Questions about food poisoning came up, and I wanted to share what I learned from a chemist. Ed, who was our tour guide, is a food chemistry whiz. During the tour, someone asked if we really needed to worry about mayonnaise. People are always worried that mayonnaise will spoil. Ed's answer will surprise you. Ed said that all commercially-made mayo is completely safe. "It doesn't even have to be refrigerated. No harm in refrigerating it, but it's not really necessary." He explained that the pH in mayonnaise is set at a point that bacteria could not survive in that environment. He then talked about the summer picnic, with the bowl of potato salad sitting on the table, and how everyone blames the mayonnaise when someone gets sick. Ed says that, when food poisoning is reported, the first thing the officials look for is when the 'victim' last ate ONIONS and where those onions came from (in the potato salad?). Ed says it's not the mayonnaise (as long as it's not homemade mayo) that spoils in the outdoors. It's probably the ONIONS, and if not the onions, it's the POTATOES. He explained onions are a huge magnet for bacteria, especially uncooked onions. You should never plan to keep a portion of a sliced onion.. He says it's not even safe if you put it in a zip-lock bag and put it in your refrigerator. It's already contaminated enough just by being cut open and out for a bit, that it can be a danger to you (and doubly watch out for those onions you put in your hotdogs at the baseball park!). Ed says if you take the leftover onion and cook it like crazy you'll probably be okay, but if you slice that leftover onion and put on your sandwich, you're asking for trouble. Both the onions and the moist potato in a potato salad, will attract and grow bacteria faster than any commercial mayonnaise will even begin to break down. Also, dogs should never eat onions. Their stomachs cannot metabolize onions. Please remember it is dangerous to cut an onion and try to use it to cook the next day, it becomes highly poisonous for even a single night and creates toxic bacteria which may cause adverse stomach infections because of excess bile secretions and even food poisoning. While it is near impossible to pinpoint a direct link between garlic consumption and cancer prevention, the National Cancer Institute (NCI) reports that “several population studies show an association between increased intake of garlic and reduced risk of certain cancers, including cancers of the stomach, colon, esophagus, pancreas, and breast.” To wit, a multi-year study of 25,000 people from Switzerland and Italy found that those who ate the most garlic and onions were up to 88 percent less likely to develop various types of cancer (including cancers of the esophagus, mouth, throat, colon, breast, ovary, prostate and kidney) than those who said they ate little or none. “High onion intake, for example, was associated with a 56 percent lower risk of colon cancer and a 25 percent lower risk of breast cancer compared to no onion intake,” reports Karen Collins of the non-profit American Institute for Cancer Research (AICR). According to Collins, another study found a 32 percent lower colon cancer risk among Iowan women who ate at least one garlic clove a week compared to others who ate one once a month or less, while an analysis of several studies worldwide “linked a 31 percent lower risk of colon cancer with consumption of about four to five cloves of garlic weekly.” And the results of several studies conducted in China show that that those who eat five cloves of garlic a week are half as likely to develop stomach cancers than non-garlic-eaters. Meanwhile, AICR reports that isolated components of garlic have shown the ability to slow or stop the growth of tumors in prostate, bladder, colon, and stomach tissue. Just how do allium plants prevent cancer? “Like many vegetables, onions and garlic contain antioxidants that can block highly reactive free radicals from damaging cell DNA and starting the cancer process,” reports Collins. “Laboratory studies have shown that onion and garlic compounds can increase enzymes that deactivate carcinogens in the body, enhancing our ability to eliminate carcinogens before they do any damage.” Some researchers, however, say that study limitations—that is, the accuracy of reported amounts and frequency of garlic consumed and the inability to compare data from studies that used different garlic products and amounts—make a definitive declaration on the topic unlikely anytime soon. And without such definitive conclusive proof of a causal link, the U.S. Food and Drug Administration will not allow food purveyors to state the health benefits of the garlic in their products on their labels. NCI would like to see better-designed human dietary studies using predetermined amounts of garlic to discern potentially effective intakes as well as more studies directly comparing various garlic preparations. “Given this protective potential, the challenge now is to identify amounts that will provide optimal effects,” says Collins. Canola is an acronym for Canada oil, low acid, and was contrived by the Canadian oil industry in 1978. Canadian scientists genetically modified the rapeseed plants for the express purpose of processing the oil for human consumption. "Can-ola," a hybridized rape plant, is one of that nation's chief export products. Rapeseed oil contains toxic erucic acid. Canola has much less erucic acid in it. Research at the University of Florida- Gainsesville, determined that as much as 4.6% of all the fatty acids in Canola are "trans" isomers (plastic) due to the refining process. Rape oil is strongly related to symptoms of emphysema, respiratory distress, anemia, constipation, irritability, and blindness in animals and humans. Rape oil was widely used in animal feeds in England and Europe between 1986 and 1991, when it was discontinued. A few relevant facts: -It is genetically engineered rapeseed. -Rapeseed oil is loaded with erucic acid, which has been shown to cause lesions of the heart - not a good side effect. So a little genetic manipulation by some plant breeders in Canada created a variety of rapeseed that produced an oil low in erucic acid. They called it LEAR oil, an acronym for Low Erucic Acid Rapeseed. Claims of several human health side effects from canola oil are: loss of vision, disruption of the central nervous system, respiratory illness, anemia, constipation, increased incidence of heart disease and cancer, low birth weights in infants and irritability. Strange new diseases involving the nervous system may be caused by Canola oil which dissolves the myelin sheath off of the nerves throughout the body. As a matter of fact, the heating of most oils during the cooking process does the same thing. Very gradually over the years, symptoms develop, which at first are perhaps only annoying, but which eventually will be diagnosed as a disease. Their vitamin E levels dropped dangerously low. Part of the test included piglets on milk replacer with soy oil and fortified with vitamin E, and their levels did not drop. In 1998, the same research group reported problems in platelet count and platelet size in piglets on canola-based feed. Health Benefits of the Avocado Promote Heart Health Before reviewing special health areas in which avocados truly shine in terms of their health benefits, it's worth remembering the big picture. That's exactly what Victor Fulgoni and his fellow researchers at Nutrition Impact, LLC did when they reviewed data from the federal government's National Health and Nutrition Examination Study (NHANES 2001-2006) and the dietary intake of 14,484 U.S. adults. Amazingly, only 273 adults participating in this study reported consumption of avocado within the last 24 hours. Amongst the 273 participants who reported recent consumption of avocado, however, nutrient intake was found to be significant higher than other participants for several vitamins (vitamin E and vitamin K), several minerals (potassium and magnesium), and at least one desirable macronutrient (total dietary fiber). Avocado consumers were also determined to be lower in weight and lower in body mass index than non-consumers. Total fat intake, total monounsaturated fat intake, and total polyunsaturated fat intake was higher in consumers of avocado, even though their overall calorie intake was not significantly different from non-consumers of avocado. This nationwide comparison of avocado consumers and non-consumers doesn't prove that avocado consumers get health advantages from avocado. Nor does it prove that avocado consumption makes us lower in weight. But it does point us in the general direction of viewing avocado as a health supportive food that may give us a "leg up" in terms of health and nourishment. Wide-Ranging Anti-Inflammatory Benefits The ability of avocado to help prevent unwanted inflammation is absolutely unquestionable in the world of health research. The term "anti-inflammatory" is a term that truly applies to this delicious food. Avocado's anti-inflammatory nutrients fall into five basic categories: phytosterols, including beta-sitosterol, stigmasterol, and campesterol carotenoid antioxidants, including lutein, neoxanthin, neochrome, chrysanthemaxanthin, beta-cryptoxanthin, zeaxanthin, violaxanthin , beta-carotene and alpha-carotene other (non-carotenoid) antioxidants, including the flavonoids epicatechin and epigallocatechin 3-0-gallate, vitamins C and E, and the minerals manganese, selenium, and zinc omega-3 fatty acids, in the form of alpha-linolenic acid (approximately 160 milligrams per cup of sliced avocado) polyhydroxylated fatty alcohols (PSA)s Arthritis—including both osteoarthritis and rheumatoid arthritis—are health problems that have received special research attention with respect to dietary intake of avocado. All categories of anti-inflammatory nutrients listed above are likely to be involved in avocado's ability to help prevent osteoarthritis and rheumatoid arthritis. One especially interesting prevention mechanism, however, appear to involve avocado's phytosterols (stigmasterol, campesterol, and beta-sitosterol) and the prevention of too much pro-inflammatory PGE2 (prostaglandin E2) synthesis by the connective tissue. Optimized Absorption of Carotenoids No single category of nutrients in avocado is more impressive than carotenoids. Here's a list that summarizes key carotenoid antioxidants provided by avocado: alpha-carotene beta-carotene beta-cryptoxanthin chrysanthemaxanthin lutein neochrome neoxanthin violaxanthin zeaxanthin Optimal absorption of these fat-soluble phytonutrients requires just the right amount and combination of dietary fats—and that is exactly the combination that is provided by avocado! Included within avocado are generous amounts of oleic acid, a monounsaturated fatty acid that makes it easier for the digestive tract to form transport molecules (chylomicrons) that can carry carotenoids up into the body. This great match between avocado's fat content and its carotenoids also extends to the relationship between avocado and other foods. Consider, for example, a simple salad composed of romaine lettuce, spinach, and carrots. This simple salad is rich in carotenoids, and when we eat it, we definitely get important carotenoid benefits. But recent research has shown that if one cup of avocado (150 grams) is added to this salad, absorption of carotenoids will be increased by 200-400%! This improvement in carotenoid absorption has also been shown in the case of salsa made with and without avocado. Supports Cardiovascular Health Avocado's support for heart and blood vessels might be surprising to some people who think about avocado as too high in fat for heart health. From a research standpoint, however, many metabolic aspects of heart health - including levels of inflammatory risk factors, levels of oxidative risk factors, and blood fat levels (including level of total cholesterol) - are improved by avocado. In addition, we know that heart health is improved by intake of oleic acid (the primary fatty acid in avocado) and by intake of omega-3 fatty acids (provided by avocado in the form of alpha-linolenic acid and in the amount of 160 milligrams per cup). Since elevated levels of homocysteine form a key risk factor for heart disease, and since B vitamins are very important for healthy regulation of homocysteine levels, avocado's significant amounts of vitamin B-6 and folic acid provide another channel of heart support. Research on avocado and heart disease remains in the preliminary stage, with studies mostly limited to lab studies on cells or animals fed avocado extracts. But we fully expect to see large-scale human studies confirming the heart health benefits of this unique food. Promotes Blood Sugar Regulation One of the most fascinating areas of avocado research—and one that may turn out to be the most unique for health support—involves carbohydrates and blood sugar regulation. Avocado is relatively low-carb food, with about 19% of its calories coming from carbs. It's also a low-sugar food, containing less than 2 grams of total sugar per cup, and falls very low on the glycemic index. At the same time, one cup of avocado provides about 7-8 grams of dietary fiber, making it an important dietary source of this blood sugar-regulating nutrient. Given this overall carb profile, we would not expect avocado to be a problematic food for blood sugar unless it was eaten in excessive amounts (many cups per serving). Within its relatively small carb content, however, avocado boasts some of the most unusual carb components in any food. When it is still on the tree, avocado contains about 60% of its carbs in the form of 7-carbon sugars. In sizable amounts, 7-carbon sugars (like mannoheptulose, the primary carb in unripened avocado) are rarely seen in foods. Because of their rare status, food scientists have been especially interested in the 7-carbon sugars (mannoheptulose, sedoheptulose, and related sugar alcohols like perseitol) found in avocado. The 7-carbon sugars like mannoheptulase may help regulate the way that blood sugar (glucose) is metabolized by blocking activity of an enzyme called hexokinase and changing the level of activity through a metabolic pathway called glycolysis. Research in this area is still a long way from determining potential health benefits for humans from dietary intake of these 7-carbon sugars. But it's an exciting area of potential health benefit for avocado, especially since this food is already recognized as low glycemic index. One final interesting observation comes from this research on avocado and its carbs: after five days of ripening (post-harvest, beginning with removal of the avocado from the tree), the carb profile of avocado changes significantly. The 7-carbon sugars change from being the predominant form of carbs in avocado (60%) to being an important but minority component (between 40-50% of total carbs). With ripening, the 5-carbon sugars—especially sucrose—become the predominant carbs. While it's too early in the research process to draw health-oriented conclusions from this information, these findings may be encouraging us to consider degree of avocado ripeness as an important factor in its health benefits. We already know to stay away from an extremely overripe avocado that has become overly soft and has developed dark sunken spots on its skin. Perhaps off in the future, we'll be able to zero in on exact amounts of avocado ripeness that offers different types of unique health benefits, including carb-related benefits. Anti-Cancer Benefits The ability of avocado to help prevent the occurrence of cancers in the mouth, skin, and prostate gland has been studied in a preliminary way by health researchers, mostly through the use of lab studies on cancer cells or lab studies involving animals and their consumption of avocado extracts. But even though this anti-cancer research has been limited with respect to humans and diet, we believe that the preliminary results are impressive. The anti-cancer properties of avocado are definitely related to its unusual mix of anti-inflammatory and antioxidant nutrients. That relationship is to be expected since cancer risk factors almost always include excessive inflammation (related to lack of anti-inflammatory nutrients) and oxidative stress (related to lack of antioxidants). But here is where the avocado story gets especially interesting. In healthy cells, avocado works to improve inflammatory and oxidative stress levels. But in cancer cells, avocado works to increase oxidative stress and shift the cancer cells over into a programmed cell death cycle (apoptosis), lessening the cancer cell numbers. In other words, avocado appears to selectively push cancer cells "over the brink" in terms of oxidative stress and increase their likelihood of dying, while at the same time actively supporting the health of non-cancerous cells by increasing their supply antioxidant and anti-inflammatory nutrients.
